Making the perfect pizza topping

The secret to a great tasting pizza is all in the topping. However, different ingredients take a different amount of time to cook. So in the interests of great flavour and avoiding food poisoning, here’s what you should definitely pre-cook.

Meat

Bread bakes a lot faster than lamb, chicken or sausage. If you don’t want the hassle of cooking meat, go for smoked salmon, chorizo, salami or other cured meats.

Strong, leafy vegetables

In today’s health-conscious times, kale, chard, and broccoli are both guilt-busting and delicious. Blanch or roast them first, but be sure to remove any water to avoid them leaving you with a soggy pizza base.

Root vegetables

Root vegetables such as squash add a hearty, delicious texture and flavour to your pizza – unless eaten raw. Then they’re about as awful as uncooked meat (though not so dangerous).

Mushrooms

Cooking mushrooms remove moisture and concentrate the flavour. You can also season with your favourite spices, garlic or sauces to add that extra kick.

Now add herbs.

Once you’ve added your toppings, bring them to life with your favourite herbs. Basil and oregano work great on pizza, as dosage and fennel. For an Asian touch, you might like to try coriander, which works great with lamb and yogurt.
